Sin embargo, no siempre queda claro qu\u00e9 significa ni c\u00f3mo identificar estos productos en la pr\u00e1ctica.<\/p>\n<p>Entender esta diferencia es importante para mejorar la calidad de la alimentaci\u00f3n sin necesidad de hacer cambios extremos.<\/p>\n<p>Procesar un alimento no lo convierte autom\u00e1ticamente en poco saludable.<\/p>\n<p>De hecho, muchos alimentos que consumimos a diario pasan por alg\u00fan tipo de procesamiento, por ejemplo:<\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\">lavar, cortar o congelar<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">cocinar o pasteurizar<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">conservar en envases<\/li>\n<\/ul>\n<p>El problema no es el procesamiento en s\u00ed, sino <b>el grado de procesamiento y el tipo de ingredientes que se agregan<\/b>.<\/p>\n<h6><b>Clasificaci\u00f3n simple (sistema NOVA)<\/b><\/h6>\n<h6><b>1. Alimentos naturales o m\u00ednimamente procesados<\/b><\/h6>\n<p>Son alimentos en su estado original o con modificaciones m\u00ednimas.<\/p>\n<p>Ejemplos (Son la base de una alimentaci\u00f3n saludable)<\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\">frutas y verduras<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">legumbres<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">carnes<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">huevos<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">arroz, avena<\/li>\n<\/ul>\n<h6><b>2. Alimentos procesados<\/b><\/h6>\n<p>Son alimentos a los que se les agregan ingredientes b\u00e1sicos como sal, az\u00facar o aceite.<\/p>\n<p>Ejemplos (Pueden formar parte de una alimentaci\u00f3n saludable, dependiendo de la calidad y cantidad):<\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\">Pan tradicional<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">Quesos<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">Conservas<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">Yogur natural<\/li>\n<\/ul>\n<h6><b>3. Productos ultraprocesados<\/b><\/h6>\n<p>Son formulaciones industriales con m\u00faltiples ingredientes, muchos de ellos no utilizados en la cocina cotidiana.<\/p>\n<p>Ejemplos(Suelen ser m\u00e1s pr\u00e1cticos, pero nutricionalmente menos favorables)<\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\">Snacks industriales<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">Bebidas azucaradas<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">Galletitas comerciales<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">Productos \u201clistos para consumir\u201d<\/li>\n<\/ul>\n<h6>\u00a0<\/h6>\n<h6><b>\u00bfC\u00f3mo identificar un ultraprocesado en la pr\u00e1ctica?<\/b><\/h6>\n<p>No hace falta memorizar listas\u2026 estas son las se\u00f1ales claras:<\/p>\n<h6><b>\u00a01. Lista de ingredientes larga<\/b><\/h6>\n<p>Si un producto tiene muchos ingredientes, es una se\u00f1al de mayor procesamiento, especialmente si aparecen nombres extra\u00f1os en su etiqueta<\/p>\n<p>Por ejemplo:<\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\">Jarabe de ma\u00edz de alta fructosa<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">Maltodextrina<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">Potenciadores de sabor<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">Colorantes y conservantes<\/li>\n<\/ul>\n<h6><b>3. Promesas de marketing llamativas<\/b><\/h6>\n<p>Frases como:<\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\">\u201clight\u201d<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">\u201cfit\u201d<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">\u201c0%\u201d<\/li>\n<\/ul>\n<p>No siempre indican mejor calidad nutricional.<\/p>\n<h6><b>4.
